To make your Babu Ganush the main ingredient will be some fresh and nice aubergines. I got some cute little ones my parents brought back directly from India. You will also need: parcil, sesame seeds, cardamon and garlic.ImageFirst roast the sesame seeds with some oil in a frying pan, then add the aubergines and cook them until they look nicely roasted.ImageFor the Tahine you need to roast some sesame seeds in a frying pan with some oil, the need to stay with a light color. Then mix the sesame seeds with some oil (about half the quantity of the sesame) in the mixer until it becomes uniform. Add the aubergines and parcil ย to the Tahimi into the mixer until you get a nice and smooth hummus.ImageImage
